3 Healthy Breakfast Recipes to lead to a great day
Hello everyone! I hope your day is going great. I know quite a few people don’t eat breakfast, but I really do believe it’s a very important meal. Even if you are not that hungry it’s still good to have a little bit of something to insure a consistent meal plan. If you are like me then you get really hungry for breakfast, no matter what time it is. I actually go to sleep dreaming about my breakfast! In this article I wanted to give a few healthy breakfast ideas.
For my breakfast recipes, I always try to make sure there is tons of protein and fiber to keep me full until lunch and not a lot of sugar. Sugar will spike your blood sugar and will make you hungrier earlier.
I want to explain why I think people should eat breakfast. If you eat breakfast, then you won’t feel the need for a constant snack. Now, I'm not saying snacking is always negative. Don’t feel bad when you need a little bit to eat, but if you are not eating breakfast and instead eating tons of snacks that might be an issue. If you eat enough at each of the three meals, then it will reduce the need to snack, and keep you full and energized all day.
In an article written by Harvard Health, it states, “It appears eating at least three times per day can keep you full and reduce hunger. This is good for weight loss. Eating fewer than three times a day puts you at risk for overeating and choosing less healthy foods.”
So, what this is saying, is if you choose healthy meals instead of a bunch of snacks, you will probably be better off. For example, if you make yourself a balanced breakfast it will be better than munching on tons of snacks throughout the day. If you use this so called “snack method” then you are more likely to eat more food that is not as healthy.
A lot of people tend to just grab whatever is available in their pantry or kitchen but most times this is not as healthy of an option then if you just eat breakfast. This is why I am going to show you some quick and easy options to make the night before or the day of.
One last tip I recommend is to try and find key things you like to eat for breakfast. For instance, do you like to eat something hot or cold, with nut butter or without, with oats or without, etc.
So, let’s get into the breakfast ideas and Ellavate it!
Tips: If you are working or in school, I would highly recommend you make these recipes on Sunday. This makes things so much less stressful!
Recipe #1: Egg bites
Tools: a bowl, a sharp knife, a whisk, a muffin tin, a cutting board, and a ¼ cup.
Ingredients: a dozen eggs, shallot or union, salt/ pepper (a good amount of this), and any ingredients you choose to add!!
Recipe:
Preheat oven to 350°F.
Spray muffin tin with non-stick oil spray, butter the tin, or use cupcake liners.
For this recipe you start by cracking a dozen eggs into a bowl, mix them with a whisk, and add salt and pepper.
Put that aside and chop up your shallot or onion on a cutting board.
Add the shallot or onion to the eggs.
Use the ¼ measuring cup to add your egg mixture to the muffin tin. Fill them up about ½ to ¾ of the way.
Next, wash and chop up the ingredients you want to put in (I used sundried to tomatoes, spinach, zucchini, basil, and feta!! It was amazing.) Then, add your ingredients.
Put your egg bites in the oven for around 8-10 minutes then turn them ½ way and bake for another 8-10 minutes.
Personal review: I absolutely loved these egg bites!! I would highly recommend adding sundried tomatoes because they added a super yummy flavor. Also, these egg bites aren’t the quickest recipe in the world (this is mainly if you are adding lots of ingredients because the chopping takes a lot of time). I would also recommend adding a generous amount of salt.
Recipe #2: Plum baked oatmeal (you can choose whatever fruit you want and substitute it in, I would highly recommend apple, plum, or berry)
Tools: an 8 or 9-inch baking dish, a spatula and/or a whisk, a medium bowl, and a smaller bowl
Ingredients: 3 cups old-fashioned rolled oats, ¾ cup brown sugar, 1 ½ tsp baking powder, 2 ½ tsp cinnamon, around 1 tsp of freshly grated nutmeg, ¾ tsp salt, 3 tbsp flax meal (not vital, but I like to add it), 3 large eggs, 3 cups milk, 2 tsp vanilla (I like to add a good amount of vanilla!), 6 tbsp of butter (melted), and 8 plums cut into ½ inch chunks.
*I like to make this recipe vegan because in my opinion it tastes moister! If you want to do this, you only need one bowl, and you can take away the eggs because flax meal is a replacement for egg. Also, use coconut oil instead of butter and a vegan milk, I use unsweetened vanilla almond milk.
Recipe:
Preheat oven to 325°F.
Grease baking dish with coconut oil or butter and put chopped plums evenly throughout the dish.
Then, in your medium bowl, combine the oats, brown sugar, baking powder, cinnamon, nutmeg, salt, and flax meal and combine.
In the other bowl, add the eggs (break them up with a whisk), then whisk in the milk and vanilla.
Add the milk mixture into the oat mixture and add the melted butter.
Pour the oatmeal mixture into the pan and spread evenly.
Bake for 35-45 minutes (depends on your oven!)
Personal review: I love making this baked oatmeal, in fact I do it quite often! My favorite type is plum!! I eat it with a tablespoon of peanut butter on top for protein, but you could add yogurt, any other nut butter, or do without anything.
Recipe #4: Smoothie (you can really make any smoothie, but this is one of my favorites)
So… because I wanted to picture to be pretty I took out the spinach and chia seeds!
My recipe for a smoothie is nowhere near exact but here it is... Lately I've liked adding a ½ cup frozen mango, a ½ cup frozen raspberries, vanilla protein powder, 1 tablespoon of chia seeds, a bunch of spinach, milk of your choice (I use coconut or almond), and ½ a banana.
Ellavate it: I like to put all my ingredients in a Tervis tumbler the night before, and then put it in the freezer overnight, so all I have to do is blend and add the milk!!
