Christmas Cookies
It’s Ellavate day 8 and I am feeling great! To boost all of our spirits we need some Christmas cookies up in here.
I don’t know about you guys but I am such a traditionalist and I love keeping up past Christmas traditions. One of my all time favorite traditions is making Christmas cookies with my family! We always make the same types of cookies because they are just too good. In this post I want to provide you with two of the best cookies on this planet.
Snowball cookies:
These are such a traditional Christmas cookie and I’m all for it. I love how they melt in your mouth and cover you in powdered sugar. This is a great recipe oof you are looking for something super easy to whip together, yet super scrumptious.
Ingredients:
2 sticks softened, unsalted butter
1/4 cup sugar
1 tsp vanilla
2 cups all-purpose flour
2 cups finely chopped pecans
Powdered sugar
Recipe:
Preheat oven to 325°F.
Finely chop pecans r put the in a food processor and pulse until finely chopped.
Add the butter and sugar into a mixer with a whisk attachment. Whisk until creamy, using a spatula to scrap the bowl. Add the vanilla and beat until well incorporated.
Add flour and pecans, mixing on low speed. Use the spatula to continue mixing if needed.
Shape the dough into balls (I am so bad at sizing so I just guesstimate). Place on baking sheet lined with parchment paper.
Bake for 16-18 minutes and more depending on size. You want them to be lightly browned.
Let cool for about 5 minutes, roll in powdered sugar (sift it first), and finish cooling. I rolled them in the powdered sugar twice, but you can do whatever you want.
Milk Bar Cornflake Crunch cookies:

Ok you guys… these are game changers. I would literally eat all of these cookies in one sitting they are so good. These are like s’mores cookies with a nice yummy crunch. The marshmallow gets all ooey gooey and makes the perfect texture to munch on. These are amazing dipped in milk or not! Are you a milk and cookies type of person?
Cornflake crunch ingredients:
5 cups corn flake cereal
1/2 cup milk powder
3 tbsp sugar
1 tsp salt
9 tbsp melted butter
Recipe:
Heat oven to 275 °F.
In a bowl, crush the cornflakes with your hands. Add the milk powder, sugar, and salt and toss to mix. Add the butter and use a spatula to incorporate. This should form clusters.
Line on a baking sheet. (Don’t separate the clusters too much!)
Cool before using
Ingredients for cookies:
2 sticks butter
1 1/4 cup granulated sugar
2/3 cup brown sugar
1 egg
1 tsp vanilla
2 cups flour
1/2 tsp baking powder
1/4 tsp baking soda
1 1/2 tsp salt
3 cups cornflake crunch
1 1/4 cup mini chocolate chips
1 cup mini marshmallows (cut them in half)
Recipe:
Heat oven to 365°F.
In a mixer with a paddle attachment, combine the butter and sugars and cream for 2-3 minutes. Scrape the sides, add the egg and vanilla and mix for 7-8 minutes.
Add flour, mix, add baking powder, mix, add baking soda, mix, and finally add salt and mix. (Once you add flour you can now over mix the dough so be careful.) Only mix until the dough comes together.
Add the corn flake crunch and chocolate chips and mix until incorporated.
Roll the dough into balls and add a few pieces of marshmallows. Line the balls on a sheet with parchment paper and refrigerate for 1 hour or freeze for 30-40 minutes (at least).
Rearrange the balls on a sheet very far apart as they will spread out. Put them in the oven and bake for 11-12 minutes turning them around halfway. (This is the time that works for my oven, so when it gets to the end of the time keep an eye out in case yours is different).
Cool the cookies and eat them up!!!
